That sounds like an amazing adventure! I’d love to see photos of your ride.

I’m not a horse rider, so I can’t tell you all the tracks that would suit a horse, but you might find this map useful:

If you zoom in it shows you most of the off-road (or quiet) roads I have ridden, which includes several different tracks for about 95% of the area between Caboolture and Gympie.

Also, you might find this resource from the Sunshine Coast Regional Council useful:
http://www.sunshinecoast.qld.gov.au/sitePage.cfm?code=mountain-biking-map

It shows tracks on the Sunshine Coast suitable for Mountain Bikes. But many of those are also suitable for horses.
